Brittle is one of the easiest and most loved candies to make, and this version is uniquely delicious. The nuttiness of the pumpkin seeds and the hint of savory from the sesame melds perfectly with the buttery caramel flavor of this brittle. Great for gift giving or just snacking on, it is sure to be a hit.

Pepita Sesame Brittle

Ingredients:
2 cups (15 oz) sugar
1/2 cup (6 oz) light corn syrup
1/2 cup (4 oz) unsalted butter
1/2 teaspoon baking soda
1 1/2 cups (6 oz) roasted salted pepitas
1/2 cup (2.5 oz) sesame seeds
Steps:
Line a baking pan with a silpat mat or parchment paper. If using parchment paper rub a thin layer of oil over the parchment to prevent the brittle from sticking.
Place baking soda in a small bowl and set aside. Mix the pepitas and sesame seeds in a bowl and set aside.
Combine the sugar, corn syrup, and butter in a medium saucepan. Stir gently over medium heat until the butter is melted and the sugar is dissolved. Stop stirring, raise the heat to high and cook until the syrup turns amber brown (the color of honey) This happens quickly so keep a close eye on the pot. If it is browning unevenly gently swirl the pan to encourage even cooking, but do not stir.
Once the syrup is cooked remove the pot from the heat and stir in the baking soda. Use caution as the mixture will foam up significantly. Add the seeds and stir until well combined. Turn the mixture out onto the prepared baking pan and use a heat proof spatula to spread the brittle into a thin layer.
Let the brittle cool completely then break it into pieces. Store in an airtight container at room temperature for up to two weeks.
